Oriental Turkey Salad

Inspired leftovers!
Diet Types: Low Carbohydrate, Low Sodium
Ingredients:
  • 1/2 head chinese cabbage, shredded
  • 1 small head Romaine lettuce, thinly sliced
  • 2 cups snow pea pods, stem tips cut off
  • 1 cup red cabbage, shredded
  • 2 carrots, shredded
  • 1/2 cup Jicama, sliced into bite size pieces
  • 1/2 cup chopped scallions
  • 2 cups cooked turkey, chopped
  • 2 tablespoons toasted Sesame Oil
  • 1/4 cup Brown Rice Vinegar
  • 1 tablespoon grated fresh Ginger Root
  • 3 tablespoons canola oil
  • 1 teaspoon dry mustard
  • drizzle of honey
  • Serves: 4
    Cooking Time: Under 30 minutes
    Instructions:
    Put all the dressing ingredients in a small jar, shake vigorously then set aside. In a large bowl, put the cabbages, lettuce, snow peas, jicima, scallions, carrots and turkey, toss well. When ready to serve, add dressing and toss again. Serve immediately.
